Menu Plan for 12-31 to 1-6-18

Another year come and gone....they go way too fast anymore!  Here's hoping for a blessed, healthy, and peaceful 2018 for us all!

One of the things I always do at the beginning of a new year is try to be more organized.  I mean well!  It doesn't always happen, but I try!

The one thing I usually keep up with, though, is menu planning.  I try to plan ahead for the coming week, since I tend to get quite busy throughout the week.  I always think I am going to re-use my menus the following year, but then it seems I never do.  I keep making new ones as I go.  Maybe someday I will, but for now I enjoy making them up as I go.

I only plan breakfast and dinner.  We usually eat leftovers or a quick sandwich at lunch, or we eat breakfast late and dinner early so there's no need for lunch!  It works for us!

I tend to cook and bake pretty simple things.  I like things I can make ahead, put in the crockpot, or make on the stove quickly.  Quite often I prep dinner in the morning, and then finish making it at dinner time.

Details for Breakfast:

Sunday - Pancakes are just a box mix - quick and easy

Monday - Omelet is just eggs with shredded cheddar folded in

Tuesday - Breakfast Casserole (from The Recipe Critic);  Fried Apples are canned from Luck's, warmed in a pan with a little extra cinnamon sugar

Wednesday - Turtle Muffins (from Your Cup of Cake)

Thursday - self-explanatory

Friday - Toast a bagel, butter it, fill with 2 fried eggs, slice of cheese, and 2 strips of cooked turkey bacon;  Oatmeal is instant apple cinnamon

Saturday - self-explanatory

Details for Dinner:

Sunday - The Best Chili On Earth (from Pip and Ebby);  Cornbread from a mix; Glazed Lemon Sour Cream Pound Cake (scroll to bottom of post for recipe)

Monday - Baked Spiral Ham (follow directions on ham); Cajun Rice is Zatarains; Cookies are Pumpkin White Chocolate Chunk Cookies from Foster's Market

Tuesday - Red Beans and Rice (from A Taste of the South magazine); Paula Deen's Banana Pudding (from Pearls, Handcuffs, and Happy Hour)

Wednesday - Use your favorite spaghetti sauce recipe, or jars of sauce!; Cherry Crisp (from Julie's Eats and Treats)

Thursday - Baked Chicken (from Gimme Some Oven), I put chicken in the brine in the fridge in the morning, then bake later in the day, REALLY good chicken this way);  Apple Slices are just fresh apples, sliced, sometimes sprinkled with a little cinnamon sugar

Friday - Hamburger Vegetable Soup (from Spend With Pennies); Cole Slaw is purchased from deli; Chicken Salad is made from leftover chicken from Thursday mixed with mayo, mustard, salt and pepper and served on sandwich bread; Ambrosia Salad (from gregkantner blog)

Saturday - Simple Salisbury Steak (from Cincy Shopper)
