Weekly Menu Plan April 28 - May 4, 2024

 

Hi there!  It's almost May, and those April showers sure did bring out those May flowers!  My lilacs are blooming, I have a horse chestnut tree that has beautiful white cone-shaped flowers on it, tulips are up, and magnolias have bloomed.  So beautiful!  I sat outside on my porch swing yesterday, and actually got a little sunburn!  My bluebirds are hatching their eggs, I think, as mama just sticks her head out of the birdhouse now and then.  Papa is busy bringing takeout for her.  

I hope you're enjoying beautiful weather where you live, because I'm sure enjoying it here.

I have another busy week of tennis ahead.  Three matches three days in a row, then more practices.  I don't know how these kids do it!  The two college girls are finished for the summer, and the youngest one has 4 more weeks and she'll be on summer break.  We are all planning some vacation time together, but most of the youngest one's summer is tennis and marching band.  The oldest girls work all summer, so everyone keeps very busy, including me!

Last week's hit and misses:

I was lukewarm on the chicken pizza crust.  To be fair, I think I overbaked it.  It wasn't bad, it wasn't good.  It was just okay.  I might try it again with a few tweaks.  My husband didn't know it was a chicken crust, he thought it was just regular crust.  It doesn't taste chicken-y.  It was great, though, if you're looking for a low carb pizza crust.  It definitely works, I just didn't think it was great.

My winner of the week was the Chopped Salad with Pasta.  I used gluten free elbow mac and tuna.  It was so good!  The dressing was just yummy!  I didn't want to use hot sauce, like the recipe called for, because I enjoy having a stomach lining.  So, I squirted in some gluten free Japanese Barbecue Sauce I got at Jungle Jim's.  If you haven't been to Jungle Jim's grocery store, you are missing out on the ultimate shopping experience.  We usually go there once or twice a year, because it's in Ohio.  And it takes the entire day to get through the store.  But SO WORTH IT!  It is huge!  They have a really good gluten free section, and they have EVERYTHING you could ever want and more.  Check it out online if you haven't been there.  But in person is the way to shop there, you can't believe how much they carry!  If you can't find it there, you can't find it anywhere.  Anyway, the salad was SUPER DELICIOUS and I will make it again soon.

Weekly Menu Plan 4/14-20, 2024

 



Hello!  Ready for another week of menus?  Sunday got here before I knew it!

We had a VERY rainy week last week, but today, it's sunny and 80 degrees.  I LOVE IT!  I am so ready for warm weather!  The coming week is all 60's and 70's, then it cools to the 50's for the weekend.  I'll take it.  We're halfway through April already, can you believe it?  This year is flying by.

I have a busy week ahead - 3 tennis matches and a tournament next weekend (for my granddaughter).  I'll be at all of them, I can't wait!  The weather should cooperate this week, at least it looks that way for now.

I'm prepping most meals in the morning, if I can, so we can eat early and scoot out of here.  At my age, I'm a slow scooter.  So I need a head start. :)

weekly Menu Plan 4-7 to 4-13, 2024

 

I love spring!  I know tomorrow is all about the eclipse, especially here in Indiana, but I'm enjoying the warmer temps.  The past few days were CHILLY, but today I can sit outside on my porch swing without a jacket, and I can listen to the birds chirping and watch my bluebirds building their nest inside the birdhouse.  

I missed a couple weeks posting, I don't know what I do but I always seem busy.  Then, when I look back at the past couple weeks, I can't think of what I was doing that I was so busy!  But at the time it seemed like I was!  My youngest granddaughter was on spring break for 2 weeks, and I'm her source of rides and entertainment while she's off.  So that kept me busy, definitely!  We had a lot of fun, and I'm ready for a good long nap or two.  Hopefully this week I'll find time to do just that!

I baked several kinds of cookies the past two weeks, most of them were yummy.  I'm ready for a break from cookies, though, so this week it's pies and bar cookies.  At least bar cookies don't take so long to bake!  

On this week's menu plan, I forgot to label a couple of them gluten free.  But they're all gluten free, and most everything I make anymore is gluten free.  It's just too hard baking separate meals for my husband, and he's fine with whatever I serve him.  I'm lucky there!

That ought to do it for this week!  Tennis season has begun for the youngest granddaughter, and I'm all set to go to as many matches as I can - both in and out of town.  I will try not to miss any, because I love watching these kids play.  It's so much fun as a grandparent to see your grandkids evolve into such wonderful young adults!  And this team has a lot of talent - it amazes me!  I just love it!

Have a wonderful week, enjoy the eclipse if you're in a prime viewing area, and be sure to use those glasses if you're going to watch it.  I'll play it safe and watch it on TV, because honestly it scares me to death to look at it.  I guess the older I get, the more cautious I become!

Weekly Menu Plan 3-17 to 3-23, 2024

 


It's corned beef and cabbage for dinner tonight!  I usually only make it once a year, on St. Patrick's Day, so we're all looking forward to it.  

I hope you had a great week last week, mine was very quiet but nice.  I had time to meet some friends for breakfast and for lunches, and it's always so nice to catch up with good friends!  💗

I've been sewing some Christmas baskets I'm making for my sister, she needs a total of 20.  I love making them, and I'm trying to get a good start and have them all finished by June or July.  Here are 2 of my favorites so far:



I have a blue one to work on today.

I've got my corned beef and cabbage in the crockpot, happily cooking on low for about 5 hours now.  It ought to be ready in a few more hours.  It smells good in the kitchen!  I don't use a recipe, I just peel and quarter about 5 or 6 potatoes and throw them in the crockpot.  Then I peel and cut up about 6 or 7 carrots into chunks, and into the crockpot they go.  I quarter an onion and spread that out on top of the carrots and potatoes.  After adding a little salt and pepper, I put the corned beef on top of the veggies and sprinkle the spice packet on top of the corned beef.  Then add a couple cups of beef broth or beer, and let it go for about 4 hours on high.  Then I quarter a small cabbage and jam it into the crockpot as best I can, because it's usually pretty full.  Turn it down to low, and let it go another 3 or 4 hours.  That's it!  Easy peasy!  And really yummy!

To make it gluten free, use 1 can gluten free cream of mushroom soup, and 1 packet of Onion Soup Mix with 1 cup of water.  Also make sure your soy sauce is gluten free.

Make sure your soy sauce and Hoisin Sauce is gluten free

Weekly Menu Plan March 10-16, 2024

 



I'm sure you're all sick of hearing the reminders to spring forward, but I thought I'd remind you anyway!  At least it means spring is almost here, right?  This week, we're having a lot of spring weather, and my forsythia bush is in full bloom.  My daffodils are about ready to open, I'm sure they will pop this week.  I love this time of year!

I'm gearing up for a busy spring, looking forward to lots of concerts and sporting events with the grandgirls.  And spring break!  I don't know why I still look forward to spring break, I've been retired for over 10 years, but I still mark it on my calendar!  :)  Old habits die hard, I guess!

Sorry I missed last week's menu plan.  On Sunday, we did a kind of impromptu dinner and I didn't have time to get on the computer.  My son made a brisket in his smoker, and everyone came over here for dinner.  I made fried apples, corn bread, mashed potatoes, green beans, and coleslaw to go with the brisket.  We all had a wonderful meal and lots of fun visiting.  I meant to do the menu plan on Monday, but I got busy and just procrastinated.  Pretty soon it was Thursday, and I realized I should just skip it altogether.  So today I start over.

Here's this week's menu plan.  Nothing fancy, I have some busy days so I'm just going for easy meals for the most part.  Check the notes and recipe links below, all of the recipes are not gluten free this week, but I make them gluten free.  All my adaptations are below.


Sunday:
Amish Cinnamon Oatmeal - use gluten free oats;  I made fried apples and put them in with the oatmeal bake, and it was delicious!
Gluten Free One Pot Gnocchi Chicken Pot Pie - I had some gluten free gnocchi so I'm using it up

Monday:
Cowboy Casserole - use gluten free onion soup mix (I get mine at Kroger), Gluten Free Cream of Mushroom Soup ( I get mine at WalMart)

Tuesday:

Wednesday:
Gluten Free Chicken Noodle Soup - this is a new recipe I'm trying, everything is gluten free except the pasta, so I'm using gluten free elbow macaroni

Thursday:
Gluten Free Morello Cherry Pie - I made this at Christmas time and it was delicious!  I don't do the crust from the recipe, I use a frozen gluten free pie crust from Maine Woods that I get at Meijer.  The filling is gluten free, so make as is.  The topping needs gluten free flour (I use King Arthur Gluten Free All Purpose Flour) and gluten free oats, in the same amounts as indicated in the recipe.  Bake as directed.  This is a very delicious pie!  I got my Morello cherries at Aldis.

Friday:
Breakfast Burrito Casserole - use gluten free tortillas (I use Mission gluten free tortillas)
Crockpot Chicken Parmesan - this is already gluten free
Affogato - easy and such a great tasting dessert!  It's light and yummy!

Weekly Menu Plan Feb. 25-March 2, 2024

 

Hi there!  What are you all cooking this week?  I just got home from the grocery store, and I can smell the beef stew cooking away in the crock pot.  I'm so hungry!

I had a great week last week.  Nothing special, just a lot of fun times with the grandgirls and family.  One of the girls came home from college this weekend, so it was great to see her!  The youngest had a birthday on Valentine's Day, and my daughter and I took her and a friend shopping on Monday last week, since they were off for President's Day.  We shopped, we had a wonderful lunch, and I enjoyed listening to two teenagers chatter away all day.  I miss those days when my kids were growing up!

Anyhoo, I'm still working through the freezer.  I had a couple packages of beef stew meat, so tonight we're having Beef Stew.  I don't really use a recipe anymore, I just use my crockpot and throw in the meat, potatoes, carrots, onions, and season with whatever sounds good.  Then I whisk together cream of mushroom soup, tomato soup, a packet or 2 of beef gravy mix, worcestershire sauce, and some beef broth. All gluten free, of course!   I stir it all together in the crock pot and let her go all day.  It always turns out good!

I can feel spring coming, can't you??  I actually went out and sat on my swing on the back patio today!  There was a gorgeous breeze, and my forsythia bushes look like they are getting ready to bud out.  I can't wait!

Weekly Menu Plan 2-18 through 2-24, 2024

 

I guess I fell asleep at the wheel  computer! I totally missed a week of menus - I was thinking about it last weekend, and then all of a sudden it was the middle of the week and I had never posted a menu!

I'll blame it on Super Bowl Sunday.  I wasn't really planning on having company, but at the last minute my family decided to get together at our house and watch the game.  I made sliders and had a nacho bar, and fresh veggies and dip.  I also made a pan of  Brownies.  We ate leftovers from that for several days!  The rest of the week, I kind of worked on cleaning out some of the freezer.

We got hit by a small winter storm yesterday, which dumped about 6 inches of snow over several hours.  The streets were icy and slick, and I was lucky to make it home from my daughter's house which is only 5 minutes away.  It took me about half an hour to get home, and I pretty much slid all the way.  Cars were pulled off the road, several cars were stuck, and I just kept plodding along, hoping for the best so I didn't have to get out and walk!  Once I got home, we stayed inside.  Same for today, we haven't gone out.  I wasn't expecting so much ice on the roads!  Tomorrow it is supposed to be in the 40's, so it will be all slushy and melting.  We have a concert to go to tomorrow, it is my granddaughter's youth orchestra.  They just won a national award, so it's pretty exciting!  I can't wait to hear them!

This week's menu plan may have to change.  I can't make it to the store until Monday, so I may have to change a couple things later in the week.  But at this point, here is what I have:

Weekly Menu Plan Feb. 4-10, 2024

 

Yay!  Old Punxsutawney Phil came through!  And he nailed it - we've had lovely weather the past few days.  I almost didn't recognize the sun when it finally came out!  I hope you've had great weather too!

Meals this week are fairly easy.  I've got a few things going on most days, so I need meals that are easy to throw together and get on the table quickly.  We're also feeling the need to go lighter - it must be the nice weather!  Here's what I planned for the coming week:



Sunday:

Breakfast:  Make Ahead Breakfast Bowls (I prepped these Saturday afternoon, kept 2 in the fridge, and froze the rest for later this week and next week),  Grapes

Dinner:  Healthy Chicken Pot Pie Soup (it's in the crockpot now!), Dinner Rolls

Dessert:  Gluten Free Brownies (from mix) , Vanilla Ice Cream

Monday:

Breakfast:  Oatmeal, Greek Yogurt, Apple Slices

Dinner:  Hamburgers, French Fries, Corn

Dessert:  Leftovers from yesterday

Tuesday:

Breakfast:  Banana Baked Oatmeal (just making it in a 9X13 pan), Mixed Fruit Cup

Dinner:  Italian Sausage and Peppers, Gluten Free Macaroni and Cheese (boxed Kraft), Green Beans

Dessert:  Gluten Free Oatmeal Scotchies, Hot Chocolate

Wednesday:

Breakfast:  Fried Egg Sandwich with Turkey Bacon, Yogurt

Dinner:  Cashew Chicken, Rice, Egg Rolls

Dessert:  Leftover Cookies, Ice Cream

Thursday:

Breakfast:  Cold Cereal, String Cheese, Pears

Dinner:  Gluten Free Tuna Casserole, Tossed Salad

Dessert:  Gluten Free Chocolate Cream Pie

Friday:  (No cooking day for me!)

Breakfast:  One of the frozen breakfast bowls from Sunday

Dinner:  Leftovers - either Tuna Casserole or Cashew Chicken

Dessert:  Leftover pie from yesterday

Saturday:

Breakfast:  French Toast Casserole, Fried Apples

Dinner:  Spaghetti with Meat Sauce, Tossed Salad

Dessert:  Gluten Free Cannoli Pie

Weekly Menu Plan 1-21 to 1-27-04, 2024

 

 
Not a happy camper this week.  Frigid temps, snow, school delays and closings, too cold to go out.  January.  Not my favorite month, definitely.  I'm so glad we are entering the LAST FULL WEEK OF JANUARY.  Hard to believe, right?  It seems like we just finished Christmas.  And it looks like, after today, we are heading into the 30's, 40's, and even 50's by the end of the week!  This morning it was -3 degrees when I got up.  So the forecast is looking good to me!  I know I am so spoiled living in Indiana!  I don't know how people can stand winter living in places like the UP in Michigan, or the New England states.  I think I would lose my mind.  

Then there's February, right around the corner.  For some reason, although it's the shortest month, it seems like the longest month to me.  I think it's because there's nothing really going on in February (other than Valentine's Day), and everyone is getting restless to go outside and see spring.  And this year is a leap year, so it's almost as long as a regular month.  So, to look on the positive side, we're almost halfway through the longest part of winter.  The days are starting to get longer, and pretty soon we'll be seeing tulips and daffodils popping up.  Right?  Right???

We're still eating from the freezer.  We ran to the grocery store for milk, eggs, bread, and coffee creamer.  That was it!  Maybe later this week I'll do a regular shopping trip.

Breakfast:  Instant Oatmeal, Hard Boiled Egg, Gluten Free Cranberry Orange Bread

Dinner:  Gluten Free Alfredo Sauce with Turkey and Broccoli over Gluten Free Pasta, Salad

Dessert:  Gluten Free Pumpkin Pie (I use a purchased gluten free pie crust)

Wednesday:

Breakfast:  Gluten Free Breakfast Casserole, Toast

Dinner:  Gluten Free Meat Loaf, Mashed Potatoes, Peas

Dessert:  Leftover Pie from yesterday

Thursday:

Breakfast:  Leftover Breakfast Casserole from yesterday

Dinner:  Clean Out The Fridge Night - choose your own adventure! :)

Dessert:  Again, whatever is left from the week!

Friday:

Breakfast:  Gluten Free High Protein Waffles, Sausage Links

Dinner:  Gluten Free Shrimp Scampi (purchased frozen from Sams Club), Rice, Green Beans

Dessert:  Gluten Free Lemon Ice Box Pie - use gluten free graham cracker pie crust (purchased)

Saturday:

Breakfast:  Leftover High Protein Waffles from yesterday, Bacon

Dinner:  Gluten Free Frozen Chicken Tenders, Gluten Free Macaroni and Cheese (purchased Kraft), Corn

Dessert:  Leftover Pie from yesterday

Weekly Menu Plan 1-14 to 1-21, 2024

 

I don't know about where you are, but here it is officially COLD.  It was -3 degrees when I got up this morning, and as I'm typing this at 3:00 in the afternoon, it has gotten all the way up to 8 degrees.  

As I saw the weather report last week, we went to the store for bread and milk and coffee creamer (my most needed ingredient), and we're eating from the freezer until the weather warms up.  I may go to the store on Wednesday if it warms up into the 20's, just for a few things.

Since I'm just going through food from my freezer, I decided to make a mini-menu plan for the week based on what I know is out there.  Sorry I'm a day late - it was so cold yesterday I just stayed on the couch most of the day, wrapped in a blanket with some magazines, some cross stitch, and some coffee.

Here is the menu plan for the week - I'll start with yesterday, even though it's already a done deal!

Breakfast:  Cranberry Orange Baked Oatmeal,  Bagel with Cream Cheese

Dinner:  Baked Ham, Baked Potatoes, Green Beans

Dessert:  Gluten Free Lemon Meringue Pie

Breakfast:  Scrambled Eggs, Turkey Bacon, Toast

Dinner:  Creamy Ham and Potato Casserole - instead of hash browns I am using cubed leftover baked potatoes from yesterday;  I will use gluten free Cream of Chicken Soup

Peas, Dinner Rolls

Dessert:  Leftover Lemon Meringue Pie from yesterday

Dinner:  Gluten Free Fettucine Alfredo, Broccoli, Tossed Salad

Dessert:  Chocolate Ice Cream with Whipped Cream and Sprinkles

Breakfast:  Gluten Free Blueberry Pancakes, Scrambled Eggs, Sausage Links

Dinner: Leftover Ham mixed in with the Gluten Free Fettucine Alfredo, Salad

Dessert:  Gluten Free Apple Cobbler with Vanilla Ice Cream

Breakfast:  Gluten Free Sausage Quiche, Toast

Dinner:  Tomato Soup, Grilled Cheese Sandwiches (with leftover ham if there is any)

Dessert:  Leftover Apple Cobbler from yesterday

Breakfast:  Egg Salad Sandwich (toasted), Turkey Bacon, Orange Slices

Dinner:  BBQ Ribs in Crockpot (I will bake them at 425 degrees for 10-15 minutes instead of broiling)

Easy Baked Beans,  Gluten Free Cornbread (from mix)

Dessert:  Gluten Free Banana Cake

Breakfast:  Instant Oatmeal, Gluten Free Cranberry Coffee Cake, Bananas

Dinner:  Fathead Pizza with Sausage and Pepperoni, Salad

Dessert:  Leftover Banana Cake from yesterday
