Weekly Menu Plan 4-30 to 5-6, 2023

 

Oh, boy, I can't wait for May to get here tomorrow!  Even though our high temp is supposed to be only 49 degrees tomorrow, it warms back up to the 60's by the middle of the week.  I love all the flowers, and the birds chirping in the morning sunlight, and the gorgeous spring breezes.  The smell of the air is just amazing!  I had my kitchen windows open yesterday, and it was just so pretty.  

I got my new stove last week.  Nothing too fancy, but I'm treating it with kid gloves for awhile.  Until the newness wears off!  I'm cleaning it every time I use it.  So far so good!

Weekly Menu Plan April 23-29, 2023

 

How are you all doing today?  We're having a cloudy, chilly spring day here in Indiana, but it will be hot before we know it!

I'm cooking from the freezer this week.  Honestly, I don't know how it gets filled up so quickly!  But I have an old chest freezer, and Heaven only knows what's at the bottom.  I need to work my way through a bunch of stuff to find out.  So, tonight, we're having corned beef and cabbage.  I know, St. Patrick's Day is over.  But I bought an extra corned beef (why?) and it was on top in the freezer.  So it smells like St. Patrick's Day in my house today.

It's so easy to make.  I just spray my crockpot with olive oil spray, then slice an onion and put it on the bottom.  Then I top it with the corned beef brisket, and sprinkle the top of the meat with the seasoning packet and some brown sugar.  Then I quarter some potatoes, sliced some carrots, slice some cabbage, and layer all that on top of the meat.

Here is the corned beef covered with potatoes and carrots.  We like a lot of carrots!


Here it is, covered up to the very top with the cabbage.  The crockpot is completely full!

I cook it on High for about 7 hours, then it's ready for dinner!

I also made some gluten free Irish Soda Bread.  I used my new Fat Daddio 10" baking pan.


I have no idea how it will be when I slice into it, but right now it's looking pretty good!  

I also made some Butterscotch Brownies (gluten free) that are still in the oven, so I'll post a picture of those when they are out of the oven.  They smell SO GOOD!

Weekly Menu Plan 4-16 to 4-22, 2023

 

I love spring, and all the flowers and warm temperatures!  But today, it is rainy and temps are dropping quickly.  I guess winter isn't wanting to leave just yet!  Yesterday it was 80 degrees, tonight we are looking at wet snowflakes falling!  In a few days, though, it will be back in the 70's until we get another system that tanks the temps.  Mother's Day is on the way, though, and that means there's usually no more frost until fall.  At least here in Indiana!

Last week, I ditched a menu plan in favor of taking it easy for a week.  I cooked so much for Easter, I was kind of tired of it.  We had a lot of leftovers, but not as many as I thought.  Family members took home some of them, and we ate a lot for dinner that day.  Most everything turned out great!  The pork loins were fabulous!  The only thing that didn't turn out was my gluten free carrot cake.  It was so wet, even after baking, and so sticky, that it just crumbled in a heap of wet cake.  I threw it out.  I don't know if it was my flour, or what.  So I made another carrot cake using regular flour, and that one was very good, according to everyone else.  I was a little bummed, because I love carrot cake, and I have never had one not turn out.  But I think I had enough to eat without it!  I usually use Bob's Red Mill gluten free flour, but this time I used Pamela's.  Since gluten free flours differ so greatly, I think that was my problem.  Back to Bob's Red Mill next time I make that cake!

Here is this week's menu plan.  I'm ready to start cooking again!  I've made tonight's dinner several times, and I love it.  So good!  I'm looking forward to a busy week ahead - I'm getting a new stove delivered on Wednesday, and can't wait!  I just hope the oven - which has an air fryer and convection oven which my current one does not - works well!  It will take some getting used to, I'm sure!

I'm so sorry this is late!  My granddaughter has been on spring break last week and this week, and I've been on grandma duty. She keeps me hopping, that's for sure!

Weekly Menu Plan 4-2 to 4-28, 2023

 

Can you believe it's Palm Sunday already?  Next week Easter!  It seems like this year just got started, and here we are 1/4 of the way through 2023 already!  

I'm working on my Easter menu.  I should have had it done by now, I am such a procrastinator!  It seemed like Easter was so far off, and that I had so much time.  Just like Christmas, it just sneaks up until it's RIGHT NOW!  I hope to have my menu in place before I go to bed tonight.

I totally forgot to post last week's menu.  I just got busy, and spaced it.  If I don't post it on Sunday afternoon, I forget all about posting.  I'm a creature of habit, I guess!

Here is this week's menu.  I have a lot to do this week, so I hope I have the energy to get all of this done!  I have Easter baskets almost done, Easter groceries to shop for, and of course cleaning and cooking.  I better double up on the vitamins this week!
