Weekly Menu Plan June 28-July 4, 2020

Happy Fourth of July Week!

Sorry I missed posting last week, I was busy with helping my daughter get ready for my granddaughter's graduation party.  Now I'm just tired!  The party was Saturday, all went well despite the rain, and now hopefully things will slow down a bit for the rest of the summer.

I will try to post next week's menu plan a few days early, since we are having visitors over the weekend.  That is my plan right now, anyway!

So, I tried Google slides again.  I am still not proficient at it by any means, but I am hoping when I try posting it here on the blog it will work.  So let's give it a try!

Hmmm.  Not what I was expecting it to look like.  But for this week, you can make it work.  And the links will work on the slide.  I think.  You need to scroll over to see the dessert column.

I see I will need to work on this again.  But it's not too terrible for one week!  So give it a go this week, and I will try to work on it again for next week.  What I am trying for, is the menu plan with the clickable links working on the picture of the menu plan.  If anyone knows how to do this, please tell me!  If not, I will keep trying!

Menu Plan for Week of June 14-20, 2020


I wish I was there!  At the beach, I mean!  I don't know why, but I've been craving going to the beach this past week.  We have vacationed at the Outer Banks several times, and I just love it there.  I am longing to go again, and smell the ocean, and feel those warm ocean breezes.  Ahhh, I can just feel it.  Maybe next year, when things are looking up.  I also love to shop there!  I could write pages about all the cute shops and restaurants they have!  I must make a plan to go next year!

Sorry the menu is a day late.  I don't know what I was doing yesterday, but I totally forgot to post this. Anyway, the format seemed to work a little better than just listing everything, and I like being able to print out a plan and hang it on my fridge.  That way I can prep things ahead of time.  I will still try to keep improving it, because I know there's lots of room for improvement!

Gluten Free Cornbread is from 40 Aprons - actually, my son makes the best gluten free cornbread in a cast iron skillet, but I have no idea how he makes it!  If I get the recipe, I will post it.  Everyone that has it loves it, whether they are gluten free or not!

Gluten Free Apple Crisp is from Mama Knows Gluten Free - you can't go wrong with any of her recipes!

Weekly Menu Plan for Week of June 7-13, 2020

Here we are in June already!  This has been one strange year so far, right?  I think we are all ready for a break from this year - physically, mentally, and emotionally!  Here's to a good June!
So let's get on with the menu plan for this week.  I have tried a different format, AGAIN.  Still not totally happy with it.  But, it is what it is.  I cannot for the life of me get links to the recipes to work.  So, what I did this week was, I italicized the foods on the menu that will have a link to the recipe below.  And, I added a pdf that you can print out if you want to.  So that's what is new this week!  Most of the recipes are gluten free this week.

Before I share the menu plan, just a heads up that next Sunday is Father's Day!  Don't forget to shop for your fathers and husbands this week, or make them a special treat!

Easy White Chocolate Strawberry Cheesecake from Dishing Delish - this is not the low-carb cheesecake I was referring to above, but since yesterday, the pin I used from Pinterest was labelled a suspicious link.  I don't know, I looked at it yesterday, but today it is blocked.  So I found another delicious gluten free cheesecake, and can't wait to try it!

Monday:


Gluten Free Chocolate Mousse from Whole Lotta Yum - I have made this before, and it is very good!

Tuesday:

Chicken Salad Croissant Sandwiches are from Taste of Home - we all love chicken salad during the summer months!

Wednesday:

Gluten Free Chicken Enchiladas are from Mommy Hates Cooking - I haven't made this before, but almost all the recipes I have tried from her site are delicious!  I don't know why she hates cooking, because she is really good at it!

Thursday:

Slow Cooker Italian Beef is from The Chunky Chef - I use mild peppers, and serve it on gluten free hoagie buns from Schar

Gluten Free Banana Cake is from Flavor Walk - I cannot wait to try this one!  The icing sounds so good!

Friday:

Gluten Free Lemon Meringue Pie is from Pillsbury Baking - I have made this once before, and I subbed Cool Whip for the meringue topping.  It was very good that way!  My husband is not a fan of meringue, so I tried it that way, and we both liked it. 

Saturday:

Hawaiian BBQ Pork Chops are from Meatloaf and Melodrama - I made these before, and then forgot all about them.  They were very good, and I am glad I found the recipe again!

Weekly Menu Plan June 1-June 6, 2020

Hi there!  How are you all doing?  Hanging in there?  Some weeks are just plain hard, no getting around it.  Keep your faith strong, read the Bible, pray, try to live following God's word and Jesus' example, and we will get through this!

I was just kind of blah today, and thinking lazily about not posting my menu plan again this week.  Sometimes I am in the mood to blog, and sometimes I'm not!  But then I decided that, even though it is such a small thing, it is the SHARING that counts.  If just one person has an easier week by looking at my menu plan, then I'm happy.  That was my original goal, just ease the burden of meal planning for one busy mom, that's the point!  Sometimes when I look at other people's menu plans, I think WOW!  I haven't made that in a long time!  And it is such a good idea!  That's what I hope someone looking at this blog finds!

We ate a LOT of leftovers last week.  I always make too much food, but that's how I was raised.  My mom always made plenty for everyone, and there was enough (usually) for seconds if you wanted any.  But I will say, she had 11 brothers and sisters, so I'm sure cooking for a huge crowd was second nature to her.  For me, and for her too, it was easier to cook a lot than to cook for two.  I really don't enjoy cooking on a small scale.  It's hard when you have kids, and learn to cook for hungry teenagers.  Then all of a sudden, they're gone and you are cooking for 2 people.  All my recipes are for serving 6-8, because my kids ate all the time and were hungry all the time.  And my husband ate a lot.  Now that we're older, we don't eat so much.  I share a lot of food with my kids and grandkids, or we would never eat it all!
