Weekly Menu Plan Jan. 31- Feb. 6, 2021

 

It's hard to imagine we have completed a full month of 2021 already!  But here we are, ready to dive into February this week.  So far, we have had a pretty mild winter here, although it did snow a couple inches last night.  Hopefully February will lead us right into a beautiful spring!  I'm ready, aren't you?

This week's menu plan includes several regular recipes that I will tweak to make them gluten free.  I did make the gluten free cranberry orange bread for breakfast this morning, and I have to say it is incredibly delicious!  You should definitely try it, I ate two pieces and I could have gone back for more!

For the Chicken and Mashed Potato Bowls, I am going to use gluten free chicken nuggets in my bowl, but regular popcorn chicken for the others.  Also, I will use McCormick's gluten free brown gravy mix.  It's usually pretty easy to tweak these recipes to make them gluten free.  The only one I won't change is the Bread Pudding on Saturday.  I will make that using regular ingredients, and I will just eat some ice cream or something else.  Once in awhile the rest of my family appreciates regular food, which I totally understand!  :)

Weekly Menu Plan for Jan 24-30, 2021

 

I don't know if it's cold where you are, but it sure is here!  The thing is, it really isn't a low temperature, it's just that the wind and the cloud cover make it a bone-chilling cold.  I just can't seem to warm up, unless I'm covered with a blanket!  We got a bit of snow this morning, but ice is on the way tonight and tomorrow.  I have an eye doctor appointment first thing tomorrow morning, but if it is icy, I'll be missing that one and staying home, safe and sound.

So what's on the menu this week?  Well, lots of gluten free recipes!  I am having so much fun trying out so many new recipes each week!  It seems like we all enjoy some variety, and being home so much during the winter makes dinner time extra special!

Here is my menu plan for the week.  The recipes that aren't designated gluten free will be tweaked to make them gluten free, so that I can have some, too!

Weekly Menu Plan 1-17 to 1-23, 2021

 

Hello!  Sorry I am running a day late here, I don't know where the time goes.  But here I am with this week's menu plan!
It has been lightly snowing this morning, in fact, it has been lightly snowing for the past 3 days.  Yet, we have a mere dusting of snow on the grass and pavement.  We are right in that 32 to 34 degree range, so the ground is too warm for much to stick.  That is good news for me - after Christmas, I'm ready for spring!  But waking up to gently falling snow is so peaceful, and makes everyone feel like staying in their jammies and slippers all day!
I have been trying to sew every day, and have finished several projects, and am almost finished with a cute snowman pillow.  I have it all quilted, I just have to make the back of it and do the binding.  It turned out pretty cute, but it was a lot of cutting.  I was going to make 5 of them for Christmas gifts this year, but I think I changed my mind and will leave it at one.  I don't know.  Maybe after I put it aside for awhile I will change my mind.  When it's finished, I will post a picture and you can let me know what you think!  Right now, I have a cute phone pouch cut out and ready to sew.  I decided to make one each month, because I love seasonal stuff!  Probably comes from being an elementary school teacher before I retired!
Here is my menu plan for the week.  Even though there are a lot of recipes to click on, nothing is that difficult.  Since I'm having such a good time sewing, I don't feel like working all day in the kitchen!  So actually it is a pretty easy week of cooking.

Weekly Menu Plan 1-10 to 1-16

 

Back again from the North Pole!  At least that's what it feels like here!  Although we have no snow, it has been gray and damp and downright dreary!  I hope it's better where you are!

I am back to my routine, and it sure does feel good!  Grandkids are back in school, at least partially.  I still haven't put away all of my Christmas stuff, but I'm working on it, slowly.  I have been spending a lot of time knitting and quilting and sewing, while I am watching this season of The Crown.  I still enjoy it, but it seems like this season has a lot of filler stuff.  A couple episodes seem like nothing at all happens in them, but the music makes it seem like something is GOING to happen, but it never does.  But, still, I like watching it.  After this I have to finish the last season of Poldark, and then I am thinking I may re-watch Downton Abbey.  

This week's menu plan has a few new recipes for me to try.  One I can't wait to try is the Chicken Fajita recipe!  And, like usual, the recipes that aren't gluten free will be tweaked to make them gluten free.  Unless it's a dessert that I really shouldn't be eating!

WMP January 3-9, 2021

 

Hi there!  Hope it doesn't look like the photo above where you are!  Here, it is gray and rainy/foggy.  No snow or ice, and that is how I like it!  I don't enjoy driving on ice, which is what we seem to get here a lot in central Indiana.  After Christmas, I am ready to move right into spring!

I hope to be getting back into my usual routine this week.  The grandkids will be going back to school, so that should help put me back onto a schedule.  I need that!  Things seem all jumbled up when the holidays are here, and for a week or so after.  It takes me a few days to recover from all the holiday activities!

This week's menu plan is not too difficult, and has mostly gluten free recipes.  The recipes that are not gluten free are easy to adapt.  For example, for tonight's soup, I am just using rice instead of orzo.  I always use gluten free cream of chicken soup, that I get at Wal Mart.  And, Wednesday's night dinner is one of my favorites, so I am really looking forward to it!
