WMP 12-27-2020 to 1-2-2021

 


Well, we made it!  Here we are at the end of 2020, ready to usher in the New Year!  You never know what to expect, but I am praying that 2021 is better than 2020, at least in the area of health hazards!  I can't wait to see the end of COVID, and pray that nothing else comes along in any way, shape, or form like it!

I took off last week in the kitchen.  We either grabbed fast food or ate a sandwich!  I was too busy to mess with cooking.  Some weeks are like that, right?  Especially the week of Christmas!  

I have a plan brewing in the back of my mind to change up the blog a bit.  I don't know if it will come to anything, but 2021 may start a different path for the blog.  Not that I won't menu plan, but I may add a few things to it here and there.

I hope you all had a wonderful Christmas!  We did, but in the next breath I will tell you that I'm glad it's over!  I am ready to get back to my usual routine.  All the shopping and baking and preparing just wears me out anymore!  But that doesn't mean I don't love Christmas and being with family!  I do love it, and look forward to it, but then I'm ready to fall back into a more sane schedule.

This week's menu plan has is what I would call moderate.  It has some baking and prep work, but not too bad.  Since there's not much going on this week, I have time to get some baking done ahead of time.  And I'm home all week, so I can do some dinner prep in the morning.  When the grandkids go back to school next week, that will change again.

Here is this week's menu plan.  Most items are gluten free, or I am modifying them to be gluten free.  Nothing too difficult!  I am looking forward to trying a bunch of new recipes in 2021, especially since I got three new gluten free cookbooks for Christmas!

Weekly Menu Plan 12-13 to 12-19, 2020

 

Hello!  Time for another week of planning menus and a TON of other things!  As are most of you, I am super busy right now, way behind, starting to panic, and a little bit frazzled.  All I want to do is take a nap!  But, there's way too much to do to take a time out. 
This week, I have made a menu that is extremely easy with very little prep, other than going to the grocery store.  On Saturday, we are having kids and grandkids over to celebrate my husband's birthday.  We are hoping the weather holds out, so my husband can grill these gorgeous steaks we got on sale this week.  He may be grilling out in the rain or the snow, but oh well!  It will be worth it, I'm sure!

Here is this week's menu plan.  Just click on the links for the recipes.  As usual, I may tweak some of the recipes to make them gluten free.  The crockpot meatballs are a favorite, and I use gluten free mushroom soup and gluten free brown gravy.  I also make my mashed potatoes with coconut milk, and they turn out just great.  Most of the desserts this week are not gluten free, because I am trying to cut back on them, and if I can't eat it I won't eat it!

Weekly Menu Plan Dec. 6-12, 2020

 


Hi there!  How are you all doing this week?  We are enjoying pretty mild weather here, in the 40's and 50's.  Not bad for December!  I could take this kind of weather all winter long!  I am hoping it at least stays through January.  Once Christmas is over, I am ready for spring!  It's always so depressing to realize that winter just begins right before Christmas, and we have at least 3 more months of cold.  So I'm crossing my fingers for a mild winter!

I am looking forward to a busy week, as are most of you!  I still have some shopping to do, but not much.  And I need to finish wrapping.  I got a good start on that, but more and more little gifts keep trickling in, and I need to sit down and get them wrapped.  Then, I should be just about done!  I have baking to do, cleaning to do, and sewing that I don't have to do but I WANT to do!

My husband's birthday is a week before Christmas, and we are planning to have family over for dinner to celebrate.  After that, I always have the kids and their families over for Christmas Eve Brunch.  So I have to start planning that.  I always make Christmas Morning Rolls, that's a tradition, and usually have a couple main dishes and a bunch of sides.  Plus desserts!  So I have to get busy planning and cooking and baking!

This week's menu plan is kind of a hodgepodge of not-too-time-consuming meals I like to make.  In my chicken noodle soup, I always use rice noodles.  I buy them in the Asian section at the grocery store.  My family can't even tell the difference anymore.  For the peanut butter ice cream pie, I will use gluten free chocolate sandwich cookies, but I will use regular ice cream and Cool Whip instead of the dairy free items called for in the recipe.  I can tolerate a little dairy now and then!

Here is this week's menu plan.  I can't wait to bake these oatmeal cookies on Saturday!  I want to see how they turn out, and what the family thinks of them!
