Well, we made it! Here we are at the end of 2020, ready to usher in the New Year! You never know what to expect, but I am praying that 2021 is better than 2020, at least in the area of health hazards! I can't wait to see the end of COVID, and pray that nothing else comes along in any way, shape, or form like it!
I took off last week in the kitchen. We either grabbed fast food or ate a sandwich! I was too busy to mess with cooking. Some weeks are like that, right? Especially the week of Christmas!
I have a plan brewing in the back of my mind to change up the blog a bit. I don't know if it will come to anything, but 2021 may start a different path for the blog. Not that I won't menu plan, but I may add a few things to it here and there.
I hope you all had a wonderful Christmas! We did, but in the next breath I will tell you that I'm glad it's over! I am ready to get back to my usual routine. All the shopping and baking and preparing just wears me out anymore! But that doesn't mean I don't love Christmas and being with family! I do love it, and look forward to it, but then I'm ready to fall back into a more sane schedule.
This week's menu plan has is what I would call moderate. It has some baking and prep work, but not too bad. Since there's not much going on this week, I have time to get some baking done ahead of time. And I'm home all week, so I can do some dinner prep in the morning. When the grandkids go back to school next week, that will change again.
Here is this week's menu plan. Most items are gluten free, or I am modifying them to be gluten free. Nothing too difficult! I am looking forward to trying a bunch of new recipes in 2021, especially since I got three new gluten free cookbooks for Christmas!
