Weekly Menu Plan 2-1to2-8, 2026

Finally!  Let's hear it for February!

I'm so glad we made it through the cold and snowy January!  We're 1/3 of the way to spring, and I can't wait!

This will be quick today.  I'm heading out to my youngest granddaughter's symphony concert this evening, and we're not going to be home much today.  Busy week ahead!  Schools are back open, the below zero temperatures are behind us (at least for now), and there's only minimum snowfall predicted for this week.  So I'm back to my normal schedule, and I can't wait!  I'm getting a touch of cabin fever.

Here is what my menu looks like this week:

(As usual, links are below)

Links:

 Chocolate Covered Strawberry Overnight Oats

Cheesy Southwest Egg Bake

Apple Crumb Pie

S'Mores Monkey Bread

Soft Shell Tacos

Buttermilk Doughnut Cake

Slow Cooker Barbecue Chicken Sandwiches

Chubby Hubby Cookies

Biscuits and Gravy Casserole

Pancake Poppers

Chicken and Vegetables with Rice Bake

Oatmeal Cream Pie Cake

Meat Lover's Quiche

Turtle Lush

As for reading, I am almost halfway through The Trackers by Charles Frazier.  I wasn't sure I'd like this book, but I really do so far!  It's historical fiction, set in the post-depression era, and I'm loving all the characters.  I'll keep you posted!
I did add a Book Review page, up at the top where the tabs are.  I will post another book review this week.  I want to get it caught up to what I am reading right now.

That's it for now, I've got to run.  Have a good week, everyone!  And I sure hope you find something you can use here!
Hugs,

  1. I love overnight oats, and the biscuits and gravy casserole sounds yummy, too! I'm glad you mentioned that we're 1/3 the way to spring. That's a good perspective. :) Visiting from the Sweet Tea & Friends linkup. If you're interested, I'd love to see this shared at my linkup as well: https://lifetalesbooks.blogspot.com/p/calling-fellow-bloggers.html Wishing you a great week ahead.
