Menu Plan for Aug. 1-7, 2021

 

Hi there!

I'm back by wildly popular demand!  That is, if you consider 1 person checking up on me, to be wildly popular!  🤣

Explanation of my absence:  I got lazy.  I guess I just needed a break from cooking and cleaning and blogging.  While I was gone, mostly I sewed.  Lots and lots of bags and a few other things.  I sewed and sewed, and we ate a lot of sandwiches and salads, and went out to eat a lot.  And I watched my soaps almost every. single. day.  We also took a two week vacation to Disney World, with my daughter and her family, and had the best time I've had in a long time.  But I'm behind on cooking and cleaning, and need to get back in a routine.  The granddaughter I babysit goes back to school this week on Thursday, so that should get me back in the swing of things.  And thank you Linda, for checking up on me, because that motivated me to stop sewing and looking at fabric all day, and to have more of a healthy balance.  

I am working on a cleaning schedule that will work for me.  I have tried lots of different schedules on Pinterest, as well as Fly Lady.  It all works for awhile, but then I miss a day or two and the whole thing gets thrown off.  I wind up doing way too little, while I need to do A LOT.  So, I am trying to be realistic and motivated at the same time.  I need to follow a routine, and I like to pre-plan my week ahead as much as possible.  I get so much more done that way!  I am about 1/3 of the way done figuring out a workable cleaning schedule.  Right now, I have post it notes and pieces of paper shoved in my planner, ready to organize.  My biggest schedule breaker is SEWING!  If I start feeling like chores are getting in the way of my sewing time, I always break away from cleaning and head to my sewing room.  I would rather bake and sew than do anything else!  But that is not good in the long term, nope.  I need to do better.

Menu planning for this week was actually fun.  I am cutting out so many desserts, but not all desserts.  I have to have something sweet and yummy to look forward to each day, are you feeling it, too?  It just makes the day so much brighter!  I love having a cookie, or a piece of pie or cake, or some kind of treat, in the evening after dinner.  It's just a luxury that I love!  Sometimes I sneak a little treat in during the day, too, depending on what I'm doing.  I've got a sweet tooth, that's for sure.

Here you go, take a look at this week's menu plan.  I've already got the Gluten Free Chicken Enchiladas ready for the oven tonight.  It smells pretty good - it's been making me hungry all day!  

     

It feels good to get back to menu planning!  I sure do hope you find something here you can use - either a main dish to try, or a complete menu, or even a dessert!

Apple Breakfast Tart

 


It's been awhile!  I had to take a little intermission while I took care of a hip and back flare-up.  I am on the road to back to normal, thanks to a good doctor and physical therapy.

So for the past month or so, we've been eating a lot of sandwiches, frozen foods, and take out.  Whatever I could throw together without too much standing and/or bending.  And although I am almost ready to start cooking again, there are a couple considerations.  

First, according to the doctor, I need to change my diet to a more healthy one.  I totally get that!  I don't like it, but I get it!  Second, I am just not quite there yet for sitting down and making a menu plan and going to several grocery stores to get everything I need.  I'm doing way better, just not there yet!

What I have done, though, is I've been looking at different ways of sharing my menu plans.  I like using Google Drive, but it's just not my favorite.  I checked out Bublup - have you heard of it?  I really like it!  It's kind of like Pinterest, in a way, but you can save files, notes, and all sorts of things in your folders.  Then, if you want them to, Bublup just takes all the stuff you've put in a folder and makes a blog post out of it somehow!  It's like magic!  

I tried one out this morning.  I made a really yummy Apple Breakfast Tart this morning, and we both loved it.  So I quick put notes and pictures in a folder, and they made it into a roll (that's what they call a blog post).  It was pretty easy and pretty darn quick to throw together!  

So....I decided to make you my guinea pigs and share the link with you all, so you can see how it looks when they mosh it all together to make a blog post.  PLEASE let me know what you think!  Because I'm thinking I may try to make my menu plans using the BublUp app, if you guys like how it looks.  If not, I can go back to the old way of using Google Drive.  It's no big deal, but I'm interested in knowing what you all think!

Weekly Menu Plan 3-7 to 3-13, 2021

 

Cute little leprechaun, isn't he?  I love snowmen, but if was here today he'd be gone tomorrow!  It got up in the 50's today, tomorrow and all week are warm in the 60's!   Woohoo!  It was so nice today, sunny and very much feeling like spring has sprung!  Although I know the cold will be back, at least we know it won't last too long.

I had such a busy weekend, I almost didn't have time to grocery shop.  But I ran to the store awhile ago, and picked up everything I need for the week.  I have another busy week ahead, running grandkids around and lots of appointments, so this week is fairly easy.

Weekly Menu Plan 2-28 thru 3-6 2021

 

We made it through January and February!  Spring is just around the corner, and I can definitely feel it!

Sorry again for being a day late.  I had company yesterday, and this morning I had a doctor's appointment and a shopping spree at Ross.  Wowzers, I love that store!  I got all kinds of stuff - not just for me, though!  I got shoes and T-shirts for the grandgirls, kitchen stuff for my daughter, and then lots of cute spring tops for me!  It was a Shop For The Girls Day!  

Here is the menu for this week.  I have a couple notes below.  Most everything is either gluten free or can be easily adapted to be gluten free.

Notes:
On days when I have cold or hot cereal, I always use gluten free cereals for me, and regular for the family.
When I use a regular recipe (not gluten free), I always substitute gluten free soups and seasonings.  I also substitute gluten free breads or bread crumbs in recipes that call for regular bread or crumbs.

Weekly Menu Plan 2-21-27, 2021

 



We are heading into the last full week of February!  YAY!!  I am so ready for spring!  Aren't you?  Today, the temps finally got above freezing, and I see some of the snow melting on my patio.  All week long it is supposed to be above freezing, and I am hoping by the end of the week we will see grass again, hear the birds again, and be ready for March to come in like a lamb.  Fingers crossed.

I have hit the February "sick of cooking and sick of being inside" wall.  I am trying to stay motivated, but seriously, I would be happy to go out to eat for every meal and just sit in my chair at home and watch Call The Midwife.  I'm even sick of sewing.  That is some SERIOUS wall hitting for me!  I think I just have the winter blahs.  If it stays sunny this week, a few short walks outside will bring me around, I think.  Or maybe I just need a nice big old shopping trip.  Something fun!

This week, menu planning was not easy for me.  Not too much was sounding good, except junk food.  Just the opposite of what I need to be eating!  So it's heavy on the desserts, friends.  And a little heavy on the comfort breakfast foods.  I seem to be craving yummy breakfasts lately.  On the other hand, I am also craving salads!  I can't wait for the weather to warm up a bit, and start eating lighter!  That always perks me up!

Weekly Menu Plan 2-14 to 2-20, 2021

 

What a hunka snow, right??  We are in the midst of a snowstorm right now, and this guy just made me laugh!  I would love to build one just like it in the middle of my yard!

Seriously, though, you won't catch me outside in the cold and snow!  Nope, I'm staying inside where it's warm, dry, and cozy.  My knitting basket is right next to my chair, my soaps are on, and if I get tired of knitting I always have my sewing.  Inside is where I want to be!

Sorry I'm a day late posting this again.  Yesterday, Valentine's Day, was also my granddaughter's birthday, so we had some celebrating to do.  I think she had a pretty fun birthday!

I think almost everything is gluten free, or can be made gluten free by using gluten free pasta.  I used the abbreviation GF for all gluten free items this week, because that's the only way I could get it to fit on this cute postcard!

Weekly Menu Plan Feb 7-13, 2021

 

It's almost Valentine's Day!  At my house, that means a birthday is coming!  Our youngest granddaughter's birthday is on Valentine's Day, so valentines take a back seat to birthday cards!

It has been super cold, and snow is in the forecast every day for the next week.  I am hoping this is it, then it starts to warm up!  I'm getting tired of going out in these cold mornings!

This week's menu plan is not too difficult, sorry I am a day late in posting it.  I had family dropping by all weekend long, and the time got away from me.  Better late than never, right??
